Risotto Rice Recipe

Ingredients:

  • 1 1/2 cups Arborio rice
  • 4 cups chicken or vegetable broth
  • 1 cup dry white wine (optional)
  • 2 cups mushrooms (cremini or shiitake), sliced
  • 1/2 cup finely chopped onion
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Prepare the Broth: In a saucepan, heat the chicken or vegetable broth over low heat. Keep it warm throughout the cooking process.
  2. Sauté the Mushrooms: In a large skillet, heat the olive oil over medium heat. Add the sliced mushrooms and cook until they become tender and browned, about 5-7 minutes. Remove half of the mushrooms and set them aside for garnish.
  3. Sauté the Aromatics: In the same skillet, add the chopped onion and minced garlic. Sauté for 2-3 minutes until they become translucent.
  4. Toast the Rice: Add the Arborio rice to the skillet and stir well to coat it with the oil and flavors. Toast the rice for about 2 minutes until the edges become translucent.
  5. Deglaze with Wine (optional): Pour in the white wine and stir until it’s mostly absorbed by the rice. This step is optional but adds a nice depth of flavor.
  6. Cook the Risotto: Begin adding the warm broth one ladle at a time to the rice mixture. Stir frequently and allow each addition of broth to be absorbed before adding more. Continue this process until the rice is creamy and cooked to your desired level of doneness, usually about 18-20 minutes.
  7. Finish with Butter and Cheese: Once the rice is creamy and tender, remove the skillet from heat. Stir in the unsalted butter and grated Parmesan cheese until they are fully incorporated. Season with salt and pepper to taste.
  8. Garnish and Serve: Spoon the creamy mushroom risotto onto serving plates. Top each serving with the reserved sautéed mushrooms and a sprinkle of fresh parsley.
