Ingredients:

For the Crust:

  • 1 ½ cups graham cracker crumbs (or any other cookie crumbs of your choice)
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted

For the Filling:

  • 3 (8-ounce) packages of cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream

Instructions:

  1. Preheat your oven to 325°F (160°C).
  2. In a medium bowl, mix the graham cracker crumbs, sugar, and melted butter until well combined. Press the mixture firmly into the bottom of a 9-inch (23 cm) springform pan to create the crust.
  3. In a large mixing bowl, beat the softened cream cheese until smooth and creamy.
  4. Gradually add the granulated sugar and continue to beat until well incorporated.
  5. Add the eggs, one at a time, mixing well after each addition.
  6. Mix in the vanilla extract and sour cream until the batter is smooth and creamy.
  7. Pour the filling over the crust in the springform pan.
  8. Tap the pan gently on the counter to remove any air bubbles.
  9. Place the cheesecake in the preheated oven and bake for about 45-50 minutes, or until the edges are set and the center is slightly jiggly.
  10. Turn off the oven and crack the door open. Let the cheesecake cool gradually in the oven for about an hour.
  11. Remove the cheesecake from the oven and refrigerate for at least 4 hours, or preferably overnight, to allow it to fully set.
